Hello, my friends, and HAPPY MONDAY! I wanted to share with y’all something that I’ve been thinking about for quite awhile – being vegan on a budget. One of the main arguments I ALWAYS seem to hear when people ask me about being vegan is this – “I can’t afford to be vegan. A vegan diet is SO EXPENSIVE.” Choosing avegan diet definitely can get expensive, the same way that a regular diet can. I can tell you, though, from my experience as a budget-friendly vegan, it does not have to be pricey.
I went to the grocery store on my lunch break today, as I forgot to bring food from home to curb my mid-day hunger. I decided to purchase products for breakfast and lunch for the rest of the week, as well as morning and afternoon snacks. Can I tell you that I only spent a little over $12 on healthy, vegan food to last me for the next four days?! I’m totally serious. Note – that amount doesn’t include meals for dinner with my family in the evening. Obviously the total would grow just a bit if I purchased additional meal items, but you get my point, right?
This afternoon, I purchased four cans of soup – lentil & vegetable, a bunch of bananas, a 5 lb bag of Red Delicious Apples, and a bag of baby carrots. I will consume either an apple or banana for breakfast (and coffee, obviously!) and a large cup of soup for lunch. If I need a mid-morning snack, I’ll choose between baby carrots, an apple, or a banana, then do the same if I feel like a snack inthe afternoon. To some of y’all, that may not sound like much, but it’s definitely enough to satisfy me until dinner in the evening.
I don’t usually meal prep, as I find a million other things to do, but it’s nice having some kind of idea as to what I’ll be consuming during the day so I don’t overeat or choose not-so-healthy vegan options (Oreo don’t contain meat, eggs,or dairy products……..)
